Vinification

Grapes are picked by hand in small boxes. Alcoholic fermentation is spontaneous with natural yeasts 1 ton tubs and steel tanks. Extraction of colour and tannins is facilitated by hand-punching down, pumping over, and deléstage. Malolactic fermentation occurs in oak.

Vintage

A very warm and consistent year, leading to a quick and complete ripeness of the fruits. Considered one of the best vintages of the decade. Warm temperatures in the summer months produced rich and intense grapes. The wines of 2015 are very fruity and structured.

Sangiovese, long misunderstood and blended with other grape varieties, has only been vinified on its own for a few decades. The greatness and potential of Sangiovese is fascinating. Similarly to Pinot Noir, it is very difficult to grow and vinify, as well as incredibly sensitive to the location it is grown in. Although the vineyards at Castagnoli are very close together, the fruit that they produce can show remarkable differences. Therefore, we divided our eleven hectares of vineyards into 19 different parcels, which we harvest, ferment and vinify separately. Each vintage, this allows us to create a Chianti Classico that best represents Castagnoli's land and the year it was produced.

Jancis Robinson

17,5 Points: "Mid crimson. Intense cherry and raspberry nose. Elegant palate weight. Richly tannic palate with fine fruit underneath. Long, youthful and rather gorgeous."

Falstaff

89 Points: "Full, sparkling ruby red with light edges. Begins with a lightly imposed nose, clearing up to raspberry and plum. Grippy, hearty tannins in the mouth, lots of potential but needs storage"
